The Thieves Guild questline in Skyrim is definitely a fan favorite! Personally, I really enjoyed the Dark Brotherhood questline. The sinister and mysterious atmosphere, along with the morally ambiguous decisions you have to make, really drew me in. Plus, who can forget the epic “Whodunit?” quest in Oblivion? So much fun!
